From great grandfathers to his own sons, The Rosskelly family of Forster, New South Wales, Australia has been in fishing for over 30 years. Now exclusively supplying and catching lobsters for Nick, Steve Rosskelly provides over 500kg of live Eastern Rock Lobsters to Nick’s on a weekly basis and has been doing so for over 7 years
“When we go out, we will spend 12 hours out at sea per trip and we go out at least once a week.” – Steve Rosskelly catches the Nick’s lobsters from Botany Bay all through to Crowdy Head, North of NSW on his two boats – a 41 foot Steber and a 60 foot Southerly.
Steve’s use of on-demand ropeless gear allows him to deliver a reliable supply much more independent of the vagaries of ocean currents and weather and filling his allotted quota efficiently by accessing fishing grounds up and down the coast. Every lobster delivered to Nick’s are also caught in a sustainable and whale-safe manner which diners really appreciate!
The Eastern Rock is arguably the best tasting lobster in the world and stock is currently at its best since the 1950’s due to the increase in quota – so it really is the best time to enjoy them especially when they come straight from sea to plate at a Nick’s restaurant!
The secret of keeping the ‘freshness’ of the lobsters at Nick’s restaurants is the monstrous sized live tanks they have at their own warehouse where the lobsters are kept. Deliveries of these lobsters will come through daily depending on the demand of each restaurant and then cooked to order!
Better yet, you can now select a live lobster on the spot at Nick’s Seafood Restaurant as they feature a new lobster tank! When we speak of demand, we mean over 300 kilos of lobsters are sold at Nick’s restaurants per week, so the rotation is just constant! Guests have the luxury of how they want their lobsters prepared with the choice of Garlic Butter, Mornay, Natural, Thermidor or Salt & Pepper – YUM!
And if you’re wondering how Nick himself enjoys his lobsters personally, it is natural and unwashed, so you get to taste the real flavours of the ocean! It is no surprise, after all, Nick’s philosophy has always been to keep the cooking and ingredients simple, so you keep the freshness of each product, be it a lobster or any of his other delicious and locally sourced crustaceans!
